This is very simple and light. Also looks pretty!

Serves: 6
  • 2 medium potatoes
  • ½ cup of sliced fresh mozzarella cheese
  • 6 eggs beaten
  • 3 tsp fresh cilantro
  • 1 tbsp olive oil
  • ½ tsp horseradish
  • ½ tsp dijon mustard
  • 2 medium tomatoes sliced thin
  • salt and pepper to taste
  1. Peel and boil the potatoes whole until tender
  2. Drizzle 1 tsp olive oil in a deep dish pie pan
  3. Slice potatoes thin and line the bottom of the pie pan, overlapping
  4. Arrange slices of mozzarella on top of potatoes
  5. Mix cilantro, salt and pepper, mustard and horseradish with the eggs
  6. Pour mixture over cheese and potatoes
  7. Arrange sliced tomatoes on top and drizzle remaining olive oil on top
  8. Season to taste
  9. Bake in preheated oven at 350
