Mediterranean Beet Salad
This fresh summer salad is great for cookouts!
Recipe type: Salad
- 2-3 lbs fresh beets: washed, peeled and cut into small cubes
- 1 cup crumbled feta cheese
- 1 cup cooked chickpeas
- ¼ cup minced parsley
- 1.5 tbsp olive oil
- 1 tbsp freshly squeezed lemon juice
- salt & pepper to tast.
- Cook beets until fork tender. Drain and chill for 1 hour
- Toss chilled beets with other ingredients and serve.
