Mango Molasses Corn Cakes

This recipe is a Caribbean twist on traditional pancakes. If mango is not available, peaches would make a good swap.

A delicious alternative to traditional pancakes.

Ingredients
  • ¾ c white or wheat flour
  • ¾ c of corn flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¼ c molasses
  • ½ tsp vanilla
  • 2 eggs
  • ¾ c pureed mango
  • ¾ c low-fat milk or milk substitute like almond milk or soy
  • ¼ c lowfat buttermilk (you can just use a milk substitute if you want this to be vegan but the buttermilk adds great flavor)
Instructions
  1. Sift the dry ingredients
  2. In a separate bowl, beat two eggs and add rest of wet ingredients
  3. Combine both bowls, mixing well.
