Mango Molasses Corn Cakes
This recipe is a Caribbean twist on traditional pancakes. If mango is not available, peaches would make a good swap.
- ¾ c white or wheat flour
- ¾ c of corn flour
- 2 tsp baking powder
- ¼ tsp salt
- ¼ c molasses
- ½ tsp vanilla
- 2 eggs
- ¾ c pureed mango
- ¾ c low-fat milk or milk substitute like almond milk or soy
- ¼ c lowfat buttermilk (you can just use a milk substitute if you want this to be vegan but the buttermilk adds great flavor)
- Sift the dry ingredients
- In a separate bowl, beat two eggs and add rest of wet ingredients
- Combine both bowls, mixing well.
