In the winter, the oven warming up the house as it bakes potatoes is comforting. In the summer, however, using the oven seems wasteful. But baked potatoes are such a versatile food. They can be eaten as a simple meal for dinner, with a variety of toppings. They have other uses than just a simple dinner. Potatoes are a comforting food and very easy to digest. Here is an easy way to have them all year round. All you need are potatoes, a crockpot and some tin foil.

First you take several potatoes, wash them well, poke them several times with a fork and wrap them in tin foil.

Place the wrapped potatoes in a crockpot and cook on high for 6-7 hours or until fork tender.

Cut up the potatoes into cubes. No need to remove the skin.

Fry them up in oil that is medium-high. They should sizzle when entering the pan. Because they are already cooked, they don’t absorb much oil.

After frying up, I drain them on paper towel or newspaper and dust them with salt, pepper and paprika.
