Mediterranean Beet Salad

This fresh summer salad is great for cookouts!
  • 2-3 lbs fresh beets: washed, peeled and cut into small cubes
  • 1 cup crumbled feta cheese
  • 1 cup cooked chickpeas
  • ¼ cup minced parsley
  • 1.5 tbsp olive oil
  • 1 tbsp freshly squeezed lemon juice
  • salt & pepper to tast.
  1. Cook beets until fork tender. Drain and chill for 1 hour
  2. Toss chilled beets with other ingredients and serve.
